Cavatelli and Broccoli with Sausage

This is a family favorite in our house! Cooking the sausage does take an hour. So you have a few options…make it without sausage, prepare the sausage the night before, or prepare the entire meal simultaneously. Do what works best for your family. I have done all three! 

 

This meal is so yummy, your family will think you ordered take out! The recipe below is for a family of 4 with leftovers.


Prep Time: 10 min         Cook Time: 1 hour
 
 

Ingredients:

Extra virgin olive oil
3 cloves of garlic minced
2 T fresh parsley (dried is fine too)

16oz package of sausage (I use sweet Italian)

1 package of cavatelli
2 1/2 cups broccoli (Cooked)
Grated cheese

I have been out of the wedding world for years! I really have no idea what the styles are. So when my friend Kristin Rockhill (www.KristinRockhill.com) asked me what I would do different for the my wedding day style, I really had NO IDEA! “Well start looking” she said “I am doing a wedding redo shoot and you are doing it!” She wrote a fun post about my original wedding...read it here Thank God for Pinterest! Here is my Board!

I spent the next few weeks searching Pinterest for ideas…and boy there are a lot of them! Part of me was excited, there are so many different ideas out there! And part of me was overwhelmed…there are SO many ideas out there!!! I was able to settle on a vintage/rustic theme! The dress I picked was amazing! I felt like a vintage princess! I wish I could share all the pictures, but she is going to attempt to get them published…so they are top secret! I can share a few though!!

It was so fun getting all glammed up for the day! I got to spend the day getting my hair and make up done and be surrounded by good friends!

My middle daughter had to come with me because of sitter issues. And the funny thing was, I wanted her in my pictures…I said if I got married again today, I would want my girls in my wedding! Crazy how priorities change. When I got married, I didn’t want any kids in my wedding or at my wedding…now it would be a giant play date! LOL!

Fish Stick Friday

We have a meal schedule. We have to, it is just easier that way. Working full-time and having 3 small children makes impulse dinners impossible! As soon as I pick up the girls, they are digging through their lunch boxes for anything they didn’t eat at lunch time! They manage to survive the ride home without starving to death…but they are in the kitchen within minutes asking about dinner. Because of this ritual I have learned 2 things….the first is that all meals are planned and usually made ahead of time. This way, only heating is required. And the second is to have cut veggies ready to go! I pull them out and make a quick arrangement on a plate, plop it down on the table, and everyone is happy to pick until dinner is ready to eat!

Our meal schedule looks something like this:
Macaroni Mondays
Taco Tuesdays
Whatever Wednesdays
Throw Back Thursdays
Fish Stick Fridays

Macaroni does not have to mean pasta with sauce. We do cavatelli and broccoli with sausage, baked ziti, or bake macaroni and cheese. Whatever Wednesdays are really just that…sometimes we have breakfast, burgers, or whatever comes to mind! Throw Back Thursdays are the day I open the fridge and the girls can have whatever leftovers they want! This is probably their favorite day…and a great way to clean out the fridge before the weekend! Add your own spin on the days. They are just a helpful guide line so you don’t have to panic on your drive home.

I even schedule the girl’s lunches. This way I know what to pack for them without trying to be creative or having to think too much at 5:30 am! Meal planning is also a great way to budget at the food store and helps to lessen impulse buys!!

Easy Veggie Pasta Meal

I LOVE these Green Giant veggies! They can be steamed in the bag in the microwave or you can cut open the package and cook them on the stove. I usually will cook them on the stove. The other night I was staring in the freezer trying to figure out what to make and I saw my buddy the Green Giant staring back at me! I grabbed the box and cooked the veggies in one pot and boiled water for past in another! Once everything was cooked, I drained the pasta and added to the veggie pot. Within minutes, dinner was done…and delish too!

If it takes more then a 20 minutes to throw together, I am out! Dinner is usually made to the lovely chorus of “I’m hungry! What’s for dinner? Is it ready yet?” So it has to be fast, healthy, and yummy!

Who am I?
Well, I am a working mom of 3 girls. I live with my husband, our 3 beautiful girls, and our 2 large dogs! We also have chickens, pigeons, and guinea hens. At some point in time we became a place for birds! We are lucky because we have several acres of land for everyone to have enough space to live and play!

I am open to new ideas and suggestions on…well just about anything that will make my every day to day life easier and happier! Raising 3 girls (ages 5 and under) is exhausting…but fun! I am up for the every day challenges…but also happy to get help when offered! Best mommy tip ever…if someone offers to help, take it!

Day 1 of Blogging…Day 1,904 of being a Mom!

I have been a mommy for 1,904 days! That is a crazy amount of time. That is a LOT of  poopy diapers, late nights, and baby wipes. Most of the days I couldn’t remember if I tried…but many of them have been burned into my memory and I will never forget them! Like the time my eldest daughter said “mommy” for the first time. Or the time my middle daughter got away from me at an event and was lost for what felt like forever….that was one of the scariest moments so far! Or some of the funny moments like when my youngest daughter got into a jar of Desistin and tried to clean the iPad with it! Or when my oldest daughter went all tattoo artist on her sister…her face was priceless! Of course I took a picture first, laughed, and then cleaned them up!

Being a mommy is great! Every day is filled with love, hugs, and kisses…it is also filled with exhaustion, boogers, and baby wipes! Getting through a day can sometimes take everything out of you. Over the past few years I have learned some tricks of the trade from veteran mommies. I have also developed some great solutions for every day mommy problems! Welcome to the spot where I will share what I know, what I don’t know, and what I think is pretty cool too!!
