Taco topped potatoes I love potatoes and I love tacos…so last night I decided to marry the two and create this yummy meal! I used what I had on hand…so feel free to substitute!

Slice about 5 baby red potatoes about 1/4 inch thick. Spray a cookie sheet with olive oil and lay the potatoes down. Do not put them on top of each other. Spray the tops of the potatoes with olive oil and sprinkle salt and pepper. Cook for 10 minutes on 350 degrees…flip and cook 5 more minutes. Sprinkle cheddar cheese on the potatoes and cook 5 more minutes. So a total of 20 minutes for the potatoes!

Meanwhile cook ground chicken (any ground meat is fine) with taco seasoning. Once it is fully cooked put it aside to wait for the potatoes. Once everything is cooked, layer potatoes on a plate and add your favorite taco ingredients on top! Last night I did taco meat, arugula, and sour cream!
