Easy healthy meal! Have you had basmati rice? It is wonderful! Very easy to make and has an almost nutty flavor. Really worth giving a try!

This was a quick, delicious, and healthy meal!

Cook the rice according the package directions. I use organic basmati rice from Wegmans. It is so easy to make. I start the rice first…this way it cooks while I am prepping and cooking the other components.

Grill chicken breast with a little bit of salt and pepper. You can add additional spices if you would like. I kept it simple for the girls.

Chop your favorite root veggies. I used carrots, turnips, and brussel sprouts! Make sure they are all about the same size so they cook evenly. Toss the veggies in olive oil and chopped rosemary. Bake on 350 degrees for about 20 – 25 minutes.

Once all the components are finished, plate, and enjoy!
